Ingredients Required to make Kaddu Ki Kheer?

  •  Pumpkin (Kaddu)                  1, medium (Peeled, trimmed and finely grated)
  •  Milk                                        1 liter
  •  Khoa                                      50 gm
  •  Malai                                      50 gm
  •  Basmati Rice                          ½ cup, Soaked
  •  Sugar                                      ½ kg
  •  Milkmaid / Condensed milk  1 cup
  •  Sabudaana                              50 gm
  •  Ghee                                       100 gm
  •  Cashew                                  25 gm
  •  Pista                                       25 gm
  •  Green Color                           ½ tsp
  •  Vanila Essence                       2 tsp
  •  Cardamom                             1tsp, powder
  •  Saffron                                   few strands
  • Almond chopped to garnish


What is the method to prepare Kaddu ki Kheer?

  • Drain the water from rice, dry it on cotton cloth and grind
  • Heat ghee in frying pan, add grated pumpkin (Kaddu) and Sauté it on medium flame
  • Add ½ liter milk to it and cook on medium flame until its almost done
  • Grind cashew and Pista.
  • Take a heavy bottomed vessel, pour remaining milk and boil.
  • Add rice flour, sabudaana, cashew & Pista powder to boiled milk. Keep stirring
  • Add elaichi (Cardamom) powder and saffron strands
  • When rice is coked, add sautéed Kaddu and cook till the mixture gets thick
  • Now add khoa, Condensed milk (Milkmaid) and malai. Stir well and cook for 1 min
  • Turn off the stove. Let it cool down. Add color and essence
  • Refrigerate for 2 – 3 hours
  • Your Kaddu ki kheer is ready, garnish with chopped Almonds, Cashew & Pista and Serve!!!

Tips

  • Don’t cook for more than 2 minutes after adding khoa, malai and condensed milk.
