Kobbari Burfi |Coconut Sweet Indian food Recipe

This coconut sweet – Kobbari Barfi is one of my favorite Indian sweet. Typically this tasty and lavishing sweet is prepared using grated coconut and Jaggery. You can also use sugar as jaggery substitute, both tastes awesome. You can try this sweet for this Pongal/ Sankranti festival as it is very simple and quick recipe. Below is the step by step recipe of this Indian Coconut sweet. In this recipe I’m using sugar instead of jaggery.

What are the ingredients I need to make Kobbari Burfi?

·         Coconut                                               1 cup full, grated
·         Sugar                                                     1 cup
·         Cardamom (Elaichi)                         ½ tsp. powder

·         Cashews                                              5, chopped
·         Ghee                                                     1 tsp


What is the method to prepare Coconut Sweet?

·         Take a pan and fry cashews till golden brown and set aside
·         Keep a tray ready greased. Fry coconut and sugar together and mix well
·         Keep heating with stirring often in medium flame. Let sugar melts and form a thick liquid.
·         Continue this until the mixture starts leaving the pan and forms a lathered whitish                 bubbles while stirring.
·          Now add cashews, cardamom powder.
·         Transfer this immediately to the greased tray and level it with a greased aluminum foil to        give it a smooth finish. Cut in to pieces while it is still warm.
·         That’s all! The sweet and appetizing mithai is ready! This stays good for even a week in      shelf.

Tips

·         The time taken to get the finish steadiness fluctuates upon the pan thickness you use,          the heat and moisture in coconut
·         If you keep the mixture in tray for so long that it cools down, then it will be difficult for              you to make pieces
·         The sugar will get caramelized and color will start to change if you keep on stirring on            flame even after the required consistency is reached
