Method to prepare Crispy Chicken Wings in Thai Food Style?

Rinse chicken wings under cold water and set
aside to drain
·
Prepare baking sheet by covering it with
parchment paper or tin foil for easy clean-up. Preheat oven to 350 degrees.

In a medium-size bowl, combine the cornstarch,
salt, sugar, garlic powder, onion powder, paprika, ground coriander, whole
cumin seeds, cayenne, and freshly-ground black pepper. Stir well to combine.

Now dredge the wings, one at a time, in the dry
spice and cornstarch mixture, making sure to coat all sides.

Lay wings neatly on prepared baking sheet. Set
in oven to bake 30 minutes.

Remove wings and use tongs to gently flip over.
Return to oven for another 30 minutes, or until wings are browned and crisped
to your liking.

While wings are cooking, prepare dipping sauce
by stirring together sweet chili sauce and mayonnaise or sour cream. Transfer
to small bowls for serving.
